- 4 medium Potatoes (Russet or Yukon Gold), peeled and diced
- 1 cup Cheese (Cheddar, sharp preferred), shredded
- 2 tbsp Butter
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Chicken or Vegetable Broth
- 1 cup Milk or Cream
- 4 slices Bacon, cooked and crumbled
- 2 Green Onions, sliced
Instructions
- Prepare the Ingredients: Peel and dice your potatoes. Chop the onions and mince the garlic.
- Cook the Bacon: In a large pot over medium heat, render the bacon until crispy. Remove and set aside, leaving the drippings.
- Sauté the Aromatics: Add butter if needed, then sauté the onions and garlic until softened, about 3-4 minutes.
- Add Potatoes and Broth: Toss in the diced potatoes, stirring to coat with aromatics. Pour in the broth and bring to a simmer. Cook until potatoes are tender.
- Blend until Creamy: Blend part of the soup with an immersion blender or in batches for creaminess.
- Add Cheese and Milk: Stir in milk or cream and cheese, allowing it to melt.
- Season to Taste: Taste and adjust seasoning with salt and pepper.
- Serve with Toppings: Ladle into bowls and add crispy bacon, extra cheese, and green onions.
Notes
For a vegetarian version, skip the bacon and use vegetable broth. Feel free to add other vegetables for extra nutrition.
