  • 4 medium Potatoes (Russet or Yukon Gold), peeled and diced
  • 1 cup Cheese (Cheddar, sharp preferred), shredded
  • 2 tbsp Butter
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Milk or Cream
  • 4 slices Bacon, cooked and crumbled
  • 2 Green Onions, sliced

Instructions

  1. Prepare the Ingredients: Peel and dice your potatoes. Chop the onions and mince the garlic.
  2. Cook the Bacon: In a large pot over medium heat, render the bacon until crispy. Remove and set aside, leaving the drippings.
  3. Sauté the Aromatics: Add butter if needed, then sauté the onions and garlic until softened, about 3-4 minutes.
  4. Add Potatoes and Broth: Toss in the diced potatoes, stirring to coat with aromatics. Pour in the broth and bring to a simmer. Cook until potatoes are tender.
  5. Blend until Creamy: Blend part of the soup with an immersion blender or in batches for creaminess.
  6. Add Cheese and Milk: Stir in milk or cream and cheese, allowing it to melt.
  7. Season to Taste: Taste and adjust seasoning with salt and pepper.
  8. Serve with Toppings: Ladle into bowls and add crispy bacon, extra cheese, and green onions.

Notes

For a vegetarian version, skip the bacon and use vegetable broth. Feel free to add other vegetables for extra nutrition.
