- 1 lb lean ground beef
- 1 cup long-grain white rice
- 1 bell pepper, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups beef or chicken broth
- 2 cups shredded cheddar cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: 1/2 cup sour cream or cream of mushroom soup
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Sauté the onions and garlic in a skillet over medium heat until fragrant and translucent (about 3-4 minutes).
- Add the ground beef, breaking it apart, and season with salt, pepper, and herbs. Cook until the meat is browned (8-10 minutes).
- Stir in the rice and vegetables, then pour in the broth until it covers the mixture (about 2 cups).
- Mix half of the shredded cheese into the casserole mix, then transfer to the greased baking dish and top with remaining cheese.
- Bake for 30-35 minutes, until the cheese is melted and bubbling.
- Let it cool for a few minutes before serving.
Notes
Feel free to customize with extra veggies or proteins. Serve with garlic bread or a fresh salad.
