  • 1 bell pepper, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef or chicken broth
  • 2 cups shredded cheddar cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1/2 cup sour cream or cream of mushroom soup

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Sauté the onions and garlic in a skillet over medium heat until fragrant and translucent (about 3-4 minutes).
  3. Add the ground beef, breaking it apart, and season with salt, pepper, and herbs. Cook until the meat is browned (8-10 minutes).
  4. Stir in the rice and vegetables, then pour in the broth until it covers the mixture (about 2 cups).
  5. Mix half of the shredded cheese into the casserole mix, then transfer to the greased baking dish and top with remaining cheese.
  6. Bake for 30-35 minutes, until the cheese is melted and bubbling.
  7. Let it cool for a few minutes before serving.
