Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the potatoes. Cut them into even cubes (about 1-inch).
  3. Mince the garlic.
  4. In a large mixing bowl, toss potato cubes with olive oil, minced garlic, salt, and pepper.
  5. Spread the seasoned potatoes on a baking sheet in a single layer and roast for about 30-35 minutes, stirring halfway through.
  6. Once cooked, sprinkle cheese over the potatoes and return to the oven for an additional 5-7 minutes.
  7. Remove from the oven, garnish with fresh herbs, and serve warm.
