- 2 lbs Yukon Gold or russet potatoes, peeled and cubed
- 4–6 cloves fresh garlic, minced
- 1/4 cup olive oil
- 1–2 cups shredded cheddar or mozzarella cheese
- Fresh parsley or chives, for garnish
- Salt and pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the potatoes. Cut them into even cubes (about 1-inch).
- Mince the garlic.
- In a large mixing bowl, toss potato cubes with olive oil, minced garlic, salt, and pepper.
- Spread the seasoned potatoes on a baking sheet in a single layer and roast for about 30-35 minutes, stirring halfway through.
- Once cooked, sprinkle cheese over the potatoes and return to the oven for an additional 5-7 minutes.
- Remove from the oven, garnish with fresh herbs, and serve warm.
Notes
