Delightful tarts filled with tender chicken, creamy cheese, and hearty potatoes, perfect for any occasion.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 2 medium potatoes, diced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Fresh thyme and rosemary, to taste
  • Salt and pepper, to taste
  • 1 pre-made pie crust or puff pastry

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt butter and sauté onions and garlic until fragrant.
  3. Add shredded chicken, salt, pepper, and herbs; mix well.
  4. Stir in diced potatoes and cook for 5 minutes until softened.
  5. Remove from heat and mix in cheeses until melted.
  6. Roll out the pie crust and cut into shapes to fit muffin tins.
  7. Press dough into muffin tins and fill with chicken and potato mixture.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool for a few minutes before serving.

Notes

Avoid overfilling the tarts; leave room for the dough to puff. Chill dough for a flakier crust.
