- 4 large fresh eggs
- 1 can refrigerated biscuit dough
- 1 cup shredded cheese (cheddar, mozzarella, or Monterey Jack)
- 1/2 cup cream or whole milk
- 1 cup mushrooms (fresh button, cremini, or shiitake)
- 1/4 cup chopped onions
- 2 cloves garlic, minced
- Fresh herbs (chives, parsley, or thyme)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, cut the biscuit dough into smaller pieces and spread them along the bottom and sides of a greased oven-safe skillet.
- In a separate skillet, heat a drizzle of olive oil over medium heat. Sauté onions and garlic until fragrant, then add the mushrooms and cook until tender, about 5 minutes.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in half the cheese, the sautéed vegetables, and fresh herbs.
- Pour the egg mixture over the biscuit base in the skillet and top with the remaining cheese. Bake in the preheated oven for 25-30 minutes, or until the egg is set and the top is golden and bubbly.
- Let the frittata cool slightly before slicing and serve with a garden salad or fresh fruit.
