- 1 cup bell peppers, chopped
- 1 cup carrots, grated
- 1 cup spinach, chopped
- 1 cup mushrooms (cremini or shiitake), diced
- 1 cup mozzarella cheese, shredded
- 1 cup cheddar cheese, shredded
- 4 large flour tortillas or phyllo dough sheets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Fresh herbs (parsley or oregano) for flavor
Instructions
- Prepare the ingredients: Wash and chop vegetables into small pieces.
- Sauté the filling: Heat olive oil in a skillet over medium heat, add garlic, then mushrooms, followed by the other veggies. Cook until tender.
- Mix in the cheese: Stir in mozzarella and cheddar until slightly melted.
- Roll them up: Spoon filling onto tortillas, fold in sides, and roll tightly. Place seam-side down on a baking sheet.
- Bake to perfection: Preheat oven to 375°F (190°C). Brush tops with olive oil and bake for 15-20 minutes until golden.
- Cool and serve: Let cool slightly, serve with your favorite sauce and garnish with fresh herbs.
Notes
For a vegan option, replace the cheese with plant-based alternatives and use hummus as a binder. Ensure not to overfill the rolls to maintain their shape while baking.
