- 1 Pie Crust (store-bought or homemade)
- 4–5 Granny Smith or Honeycrisp Apples
- 8 oz Cream Cheese
- 3/4 cup Granulated Sugar
- 2 Eggs
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1 tsp Vanilla Extract
- 2 tbsp Butter (melted)
Instructions
- Prepare the Pie Crust: Roll out the pie crust and refrigerate it.
- Make the Apple Filling: Peel, core, and slice apples, then toss with sugar, cinnamon, and nutmeg. Let sit for 10 minutes.
- Prepare the Cheesecake Filling: Beat the cream cheese until smooth, then mix in sugar, eggs, and vanilla extract until combined.
- Assemble the Pies: Preheat oven to 375°F (190°C). Layer apple filling, cheesecake filling, and more apple filling in the crust. Cover with a second layer of crust if desired.
- Bake: Bake for 30-40 minutes until crust is golden and filling is bubbly. Cool for at least 20 minutes before slicing.
- Serve: Top with whipped cream if desired and serve warm.
Notes
For a vegan option, use dairy-free cream cheese and a plant-based crust. Allowing the pies to cool adequately helps to set the filling properly.
