Ingredients

  • 4 chicken thighs (bone-in or boneless)
  • 1 sheet puff pastry
  • 4 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup spinach or mushrooms (sautéed)
  • 1 tsp fresh thyme or rosemary
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with salt, pepper, and herbs. Sauté in a skillet over medium heat for 5-7 minutes per side until golden brown and cooked through. Let cool then shred.
  2. Sauté onions and garlic in the same skillet until translucent. Add spinach or mushrooms and cook until softened.
  3. In a bowl, mix shredded chicken, sautéed veggies, cream cheese, and cheddar until well combined.
  4. Roll out puff pastry and cut into circles. Fill with chicken mixture, fold, and crimp edges to seal.
  5. Brush tops with egg wash and bake at 400°F (200°C) for 20-25 minutes until puffed and golden.
  6. Let cool for 5 minutes before serving.

Notes

For a vegetarian version, substitute chicken thighs with jackfruit. You can use any cheese you prefer.
