- 4 chicken thighs (bone-in or boneless)
- 1 sheet puff pastry
- 4 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup spinach or mushrooms (sautéed)
- 1 tsp fresh thyme or rosemary
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions
- Season chicken thighs with salt, pepper, and herbs. Sauté in a skillet over medium heat for 5-7 minutes per side until golden brown and cooked through. Let cool then shred.
- Sauté onions and garlic in the same skillet until translucent. Add spinach or mushrooms and cook until softened.
- In a bowl, mix shredded chicken, sautéed veggies, cream cheese, and cheddar until well combined.
- Roll out puff pastry and cut into circles. Fill with chicken mixture, fold, and crimp edges to seal.
- Brush tops with egg wash and bake at 400°F (200°C) for 20-25 minutes until puffed and golden.
- Let cool for 5 minutes before serving.
Notes
For a vegetarian version, substitute chicken thighs with jackfruit. You can use any cheese you prefer.
