  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup fresh pitted cherries, chopped
  • 2 large eggs, at room temperature
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, beat the softened butter with both sugars until fluffy and light in color.
  3. Add eggs one at a time, mixing well after each addition, then pour in the cherry soda.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually combine with wet ingredients.
  5. Fold in pitted cherries until evenly distributed.
  6. Drop tablespoons of dough onto baking sheets, spacing them apart.
  7. Bake for 10-12 minutes or until edges are golden. Cool slightly before transferring to wire racks.
