  • 4 cups Fresh Strawberries, hulled and mashed
  • 2 cups Champagne or Sparkling Wine
  • 3 cups Granulated Sugar
  • 1 package Pectin
  • 1/4 cup Lemon Juice

Instructions

  1. Prepare the Strawberries: Start by washing and hulking your strawberries, then roughly mash them in a large bowl.
  2. Cook the Mixture: In a medium saucepan, combine the mashed strawberries, Champagne, granulated sugar, and lemon juice. Stir it all together over medium heat until the mixture starts to boil.
  3. Add Pectin: Once boiling, stir in the pectin. Keep stirring while it continues to boil for about one minute.
  4. Test the Gel: To check if your jelly is ready, drop a spoonful onto a chilled plate. If it wrinkles and holds its shape, it’s ready for canning.
  5. Canning: Sterilize your jars by placing them in boiling water for ten minutes. Carefully ladle the hot jelly into the jars, leaving about half an inch of headspace.
  6. Cooling: Place the jars upside down for about five minutes, then turn them back upright. Let them cool completely before storing.
