  • 1 package gnocchi (store-bought or homemade)
  • 1 cup raw cashews
  • 2 bell peppers (red, yellow, and green), chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 cup coconut milk
  • Fresh cilantro or parsley for garnish
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large sheet pan, toss chopped onions and bell peppers with olive oil, salt, and pepper. Roast for about 20 minutes until tender and slightly caramelized.
  3. While veggies are roasting, blend soaked cashews with crushed tomatoes, minced garlic, coconut milk, and spices until smooth and creamy.
  4. Boil gnocchi according to package instructions until slightly undercooked, then drain.
  5. Add roasted vegetables to the pan with gnocchi and pour the cashew sauce over everything. Toss gently to combine.
  6. Return the pan to the oven and roast for an additional 10-15 minutes until golden and crisp.
  7. Garnish with fresh herbs and serve warm.

Notes

For added crunch, garnish with toasted cashews or serve with a dollop of yogurt. Use sunflower seeds or silken tofu for a nut-free option.
