- 1 package gnocchi (store-bought or homemade)
- 1 cup raw cashews
- 2 bell peppers (red, yellow, and green), chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 2 teaspoons garam masala
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 cup coconut milk
- Fresh cilantro or parsley for garnish
- Olive oil, salt, and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- On a large sheet pan, toss chopped onions and bell peppers with olive oil, salt, and pepper. Roast for about 20 minutes until tender and slightly caramelized.
- While veggies are roasting, blend soaked cashews with crushed tomatoes, minced garlic, coconut milk, and spices until smooth and creamy.
- Boil gnocchi according to package instructions until slightly undercooked, then drain.
- Add roasted vegetables to the pan with gnocchi and pour the cashew sauce over everything. Toss gently to combine.
- Return the pan to the oven and roast for an additional 10-15 minutes until golden and crisp.
- Garnish with fresh herbs and serve warm.
Notes
For added crunch, garnish with toasted cashews or serve with a dollop of yogurt. Use sunflower seeds or silken tofu for a nut-free option.
