- 8 oz fettuccine or bucatini pasta
- 2 medium leeks, sliced and rinsed
- 8 oz cremini or shiitake mushrooms, sliced

- 1/4 cup grated Parmesan cheese, for garnish

Instructions
- Prepare the Ingredients: Clean and slice the leeks, slice the mushrooms, mince the garlic, and measure out your pasta according to package instructions.
- Cook the Pasta: Boil salted water and cook pasta until al dente. Reserve a cup of pasta water and drain.
- Sauté the Leeks: In a large skillet, heat butter and olive oil over medium heat. Add leeks and cook until soft and golden (10-15 minutes).
- Add Garlic and Mushrooms: Once leeks are caramelized, add garlic and mushrooms, cooking for an additional 5-7 minutes.
- Combine with Pasta: Add pasta to the skillet, tossing with leeks and mushrooms. Incorporate reserved pasta water as needed for a creamy texture.
- Finish with Fresh Herbs and Cheese: Remove from heat, mix in herbs and grated cheese until melted.
- Serve and Enjoy: Plate and garnish with additional herbs and cheese, and enjoy fresh with a squeeze of lemon.
Notes
For a vegan option, substitute butter with olive oil and Parmesan with nutritional yeast. Add seasonal vegetables like spinach or asparagus for extra flavor.
