Instructions

  1. Prepare the Ingredients: Clean and slice the leeks, slice the mushrooms, mince the garlic, and measure out your pasta according to package instructions.
  2. Cook the Pasta: Boil salted water and cook pasta until al dente. Reserve a cup of pasta water and drain.
  3. Sauté the Leeks: In a large skillet, heat butter and olive oil over medium heat. Add leeks and cook until soft and golden (10-15 minutes).
  4. Add Garlic and Mushrooms: Once leeks are caramelized, add garlic and mushrooms, cooking for an additional 5-7 minutes.
  5. Combine with Pasta: Add pasta to the skillet, tossing with leeks and mushrooms. Incorporate reserved pasta water as needed for a creamy texture.
  6. Finish with Fresh Herbs and Cheese: Remove from heat, mix in herbs and grated cheese until melted.
  7. Serve and Enjoy: Plate and garnish with additional herbs and cheese, and enjoy fresh with a squeeze of lemon.

Notes
