An indulgent dessert featuring a creamy custard topped with a crunchy caramelized sugar layer.

- 2 cups heavy cream
- 6 large egg yolks
- 3/4 cup granulated sugar (divided)
- 1 vanilla bean or 1 tsp vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan over medium heat, warm the heavy cream until hot but not boiling. Stir in vanilla bean seeds or extract and steep.
- In a mixing bowl, whisk together egg yolks and 1/2 cup granulated sugar until pale and creamy. Add a pinch of salt.
- Gradually pour the hot cream into the egg yolk mixture, stirring continuously to avoid curdling.
- Strain the mixture through a fine-mesh sieve into a pitcher.
- Pour the custard into ramekins and place them in a baking dish. Add hot water halfway up the sides of the ramekins.
- Bake for 30-40 minutes, until set with a gentle jiggle in the center. Cool then chill in the fridge for at least 2 hours.
- Before serving, sprinkle an even layer of sugar on top of each custard and use a torch to caramelize the sugar until golden and bubbly.
Notes
For a deeper caramel flavor, substitute granulated sugar with brown sugar. If desired, use coconut milk for a dairy-free version.
