  • 24 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 4 cups tart apples (like Granny Smith or Honeycrisp), peeled and sliced
  • 1/4 cup brown sugar
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine crushed graham crackers, melted butter, and sugar in a bowl, then press into the bottom of a springform pan and bake for 8 minutes.
  3. In a mixing bowl, beat softened cream cheese until smooth, then gradually mix in sugar and eggs, followed by spices.
  4. Sauté sliced apples in butter with cinnamon and sugar until tender, then spread them over the cooled crust.
  5. Pour the cheesecake filling over the apples and smooth it out gently.
  6. Bake in a water bath for 55-60 minutes until set but slightly jiggly.
  7. Turn off the oven and let the cheesecake cool inside.
  8. Prepare the topping by mixing crushed graham crackers, melted butter, and brown sugar, then sprinkle over the cheesecake and drizzle with caramel sauce.
  9. Chill for at least 4 hours or overnight before serving.

Notes

For a vegan version, substitute eggs with flaxseed meal and use vegan cream cheese and caramel sauce.
