- 2 cups graham crackers, crushed
- 1/2 cup butter, melted
- 1/4 cup granulated sugar
- 24 oz full-fat cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 4 cups tart apples (like Granny Smith or Honeycrisp), peeled and sliced
- 1/4 cup brown sugar
- 1 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C).
- Combine crushed graham crackers, melted butter, and sugar in a bowl, then press into the bottom of a springform pan and bake for 8 minutes.
- In a mixing bowl, beat softened cream cheese until smooth, then gradually mix in sugar and eggs, followed by spices.
- Sauté sliced apples in butter with cinnamon and sugar until tender, then spread them over the cooled crust.
- Pour the cheesecake filling over the apples and smooth it out gently.
- Bake in a water bath for 55-60 minutes until set but slightly jiggly.
- Turn off the oven and let the cheesecake cool inside.
- Prepare the topping by mixing crushed graham crackers, melted butter, and brown sugar, then sprinkle over the cheesecake and drizzle with caramel sauce.
- Chill for at least 4 hours or overnight before serving.
Notes
For a vegan version, substitute eggs with flaxseed meal and use vegan cream cheese and caramel sauce.
