  • 1/2 cup (120g) sour cream
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 cup (100g) graham cracker crumbs
  • 1/4 cup (60g) unsalted butter, melted
  • 2 medium tart apples (Granny Smith or Honeycrisp), finely chopped
  • 1/4 cup (60ml) caramel sauce
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare a mini muffin pan with liners.
  2. In a bowl, mix graham cracker crumbs with sugar and melted butter, then press into the bottom of each muffin cup.
  3. Beat the cream cheese until smooth, then add sugar, sour cream, and eggs until creamy.
  4. Fold in chopped apples, cinnamon, and nutmeg, then divide the mixture among the muffin cups.
  5. Bake for 15-20 minutes until edges are set; the centers should be slightly jiggly.
  6. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
