Description

Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ cup crushed candy canes

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the butter and sugar in a large bowl until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour and baking powder, then gradually mix into the wet ingredients until just combined.
  5. Fold in the crushed candy canes gently to distribute throughout the dough.
  6. Scoop tablespoon-sized portions onto the lined baking sheets, spacing them about an inch apart. Sprinkle more crushed candy canes on top.
  7. Bake for 10-12 minutes, until the edges are lightly golden. Allow to cool on the sheet for a few minutes before transferring to a wire rack.
  8. For decoration, drizzle melted white chocolate over the cooled cookies if desired.

Notes

Chill the dough for at least 30 minutes for chewier cookies. Keep an eye on them while baking to avoid overcooking.
