- 4 medium Yukon Gold or Russet potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 bell pepper, chopped
- 4 cups chicken or vegetable broth
- 2 tablespoons Cajun seasoning
- 1 cup cream or coconut milk
- Fresh herbs (like parsley or green onions) for garnish
- 2 tablespoons butter
Instructions
- In a large pot, melt butter over medium heat. Add chopped onions, celery, and bell peppers. Sauté until softened, about 5 minutes. Add garlic and sauté for an additional minute.
- Sprinkle in your Cajun seasoning and cook for another minute, stirring to release all the fragrant oils.
- Toss in the diced potatoes and pour in the broth. Bring to a boil, then lower the heat. Let it simmer for about 15-20 minutes, or until the potatoes are fork-tender.
- Use an immersion blender to puree part of the soup for a smoother texture, or transfer in batches to a traditional blender.
- Stir in cream or coconut milk, allowing it to warm through. Taste and adjust seasoning as needed.
- Ladle into bowls and sprinkle with fresh herbs or green onions before serving.
