Ingredients

  • 4 medium Yukon Gold or Russet potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 bell pepper, chopped
  • 4 cups chicken or vegetable broth
  • 2 tablespoons Cajun seasoning
  • 1 cup cream or coconut milk
  • Fresh herbs (like parsley or green onions) for garnish
  • 2 tablespoons butter

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onions, celery, and bell peppers. Sauté until softened, about 5 minutes. Add garlic and sauté for an additional minute.
  2. Sprinkle in your Cajun seasoning and cook for another minute, stirring to release all the fragrant oils.
  3. Toss in the diced potatoes and pour in the broth. Bring to a boil, then lower the heat. Let it simmer for about 15-20 minutes, or until the potatoes are fork-tender.
  4. Use an immersion blender to puree part of the soup for a smoother texture, or transfer in batches to a traditional blender.
  5. Stir in cream or coconut milk, allowing it to warm through. Taste and adjust seasoning as needed.
  6. Ladle into bowls and sprinkle with fresh herbs or green onions before serving.
