A comforting, creamy soup packed with potatoes and smoky sausage, seasoned with Cajun spices.
Ingredients

- 4 medium Yukon Gold or Russet potatoes, peeled and diced
- 1 lb Andouille sausage, sliced (or turkey sausage for a lighter option)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (or poblano for extra flavor)
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups low-sodium chicken broth or vegetable broth
- 1 cup heavy cream or half-and-half
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat some olive oil over medium heat. Add diced onions, bell peppers, and minced garlic. Sauté until they’re tender and aromatic, about 5 to 7 minutes.
- Add in the sliced sausage and cook until browned to release its flavor.
- Stir in the diced potatoes, chopped carrots, and celery. Cook for another 3 to 4 minutes.
- Add the chicken or vegetable broth along with bay leaves and spices. Bring to a boil, then reduce to a simmer for 20 to 25 minutes or until the potatoes are tender.
- Remove bay leaves and stir in the heavy cream. For a thicker consistency, use an immersion blender to purée a portion of the soup.
- Taste and adjust seasoning, adding salt, pepper, or hot sauce as desired.
- Ladle into bowls and garnish with fresh chopped parsley or scallions. Serve warm with crusty bread.
Notes
Let the soup rest for about 30 minutes after cooking for the flavors to meld. Reheating can enhance the flavors even further.
