  • 2 tablespoons Cajun seasoning
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prep your ingredients: Start by peeling and dicing the potatoes into small cubes, roughly 1-inch pieces, to ensure they cook evenly. Dice the onion and mince the garlic, setting everything aside.
  2. Sauté: In a large pot or Dutch oven, melt 2 tablespoons of butter over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the garlic and cook for an additional minute, until fragrant.
  3. Add the sausage: Slice your andouille sausage into rounds and add it to the pot. Sauté until the sausage is browned and releases a lovely, smoky aroma.
  4. Stir in the potatoes and broth: Add the diced potatoes to the pot, mixing them in with the sausage and onions. Pour in enough broth to cover the potatoes completely. Bring the mixture to a boil.
  5. Season and simmer: Once boiling, reduce the heat to a simmer and add your Cajun seasoning, mixing well. Cover the pot and allow it to simmer for about 20-25 minutes or until the potatoes are tender.
  6. Creamy finish: Once the potatoes are cooked through, stir in the heavy cream. For a creamier texture, use an immersion blender to blend some of the potatoes into the soup, leaving some chunks for heartiness.
  7. Serve and garnish: Ladle the soup into bowls, garnishing with chopped green onions and fresh parsley. Optionally, sprinkle a little more Cajun seasoning on top.

Notes

For a lighter version, use turkey sausage or omit the sausage and replace broth with vegetable stock. Pair with warm bread or cornbread.
