Description

Ingredients

  • 8 oz elbow macaroni
  • 8 oz Andouille sausage, sliced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 2 cups half-and-half
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1/2 cup breadcrumbs

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain.
  2. Sauté the Andouille sausage in a skillet until browned, then set aside.
  3. Add onions and bell peppers to the skillet and sauté until soft.
  4. In a separate saucepan, melt the butter and whisk in the flour to make a roux.
  5. Gradually add the half-and-half, whisking until smooth and thickened.
  6. Stir in the cheese until melted, followed by the spices.
  7. Mix the cooked pasta, sausage, vegetables, and cheese sauce together.
  8. Transfer to a greased baking dish, top with breadcrumbs, and bake at 350°F (175°C) for 20-25 minutes.
  9. Let cool slightly before serving.

Notes

For lighter versions, consider using whole milk or plant-based milk. Leftovers can be refrigerated for 3-5 days or frozen for up to 3 months.
