- 8 oz elbow macaroni
- 8 oz Andouille sausage, sliced
- 1 cup sharp cheddar cheese, shredded
- 1 cup Gruyère cheese, shredded
- 2 cups half-and-half
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1 cup diced onions
- 1 cup diced bell peppers
- 1/2 cup breadcrumbs
Instructions
- Cook the pasta in salted boiling water until al dente, then drain.
- Sauté the Andouille sausage in a skillet until browned, then set aside.
- Add onions and bell peppers to the skillet and sauté until soft.
- In a separate saucepan, melt the butter and whisk in the flour to make a roux.
- Gradually add the half-and-half, whisking until smooth and thickened.
- Stir in the cheese until melted, followed by the spices.
- Mix the cooked pasta, sausage, vegetables, and cheese sauce together.
- Transfer to a greased baking dish, top with breadcrumbs, and bake at 350°F (175°C) for 20-25 minutes.
- Let cool slightly before serving.
Notes
For lighter versions, consider using whole milk or plant-based milk. Leftovers can be refrigerated for 3-5 days or frozen for up to 3 months.
