Delicious burritos filled with marinated chicken, black beans, and fresh vegetables featuring a spicy Cajun flair.
Ingredients
- Boneless, skinless chicken breasts or thighs
- Canned black beans, rinsed and drained
- Cajun seasoning
- Bell peppers, chopped
- Onions, chopped
- Tortillas (flour or corn)
- Fresh cilantro, chopped
- Sour cream, cheese, or avocado (optional toppings)
Instructions
- In a bowl, marinate the chicken with Cajun seasoning, olive oil, and lime juice for at least 30 minutes.
- Cook the marinated chicken in a skillet over medium heat for 6-7 minutes per side. Remove and let it rest before slicing.
- Sauté onions and bell peppers in the same skillet for about 5-6 minutes until tender.
- Return the sliced chicken to the skillet, add black beans, and stir to combine. Taste and adjust seasoning.
- Warm tortillas slightly, fill them with the chicken and bean mixture, add toppings, and roll them tightly.
- Optional: Place burritos seam-side down on a skillet for a minute to add crunch.
- Slice and serve with lime wedges and hot sauce.
