Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Canned black beans, rinsed and drained
  • Cajun seasoning
  • Bell peppers, chopped
  • Onions, chopped
  • Tortillas (flour or corn)
  • Fresh cilantro, chopped
  • Sour cream, cheese, or avocado (optional toppings)

Instructions

  1. In a bowl, marinate the chicken with Cajun seasoning, olive oil, and lime juice for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat for 6-7 minutes per side. Remove and let it rest before slicing.
  3. Sauté onions and bell peppers in the same skillet for about 5-6 minutes until tender.
  4. Return the sliced chicken to the skillet, add black beans, and stir to combine. Taste and adjust seasoning.
  5. Warm tortillas slightly, fill them with the chicken and bean mixture, add toppings, and roll them tightly.
  6. Optional: Place burritos seam-side down on a skillet for a minute to add crunch.
  7. Slice and serve with lime wedges and hot sauce.
