- 2 boneless chicken breasts or thighs
- 1 can black beans, drained and rinsed
- 1 cup bell peppers, chopped
- 2 cloves garlic, minced
- 1 onion, diced
- 2 tablespoons Cajun seasoning
- 4 large flour tortillas
- 1/4 cup fresh cilantro, chopped
- 1 cup shredded cheese (optional)
- 1 tablespoon olive oil
Instructions
- Chop the chicken into bite-sized pieces and mince the garlic and onions.
- In a large skillet, heat olive oil over medium-high heat. Add chicken, season with salt and Cajun seasoning, and sauté until golden brown (6-8 minutes). Remove and set aside.
- In the same skillet, add more oil if needed and sauté garlic and onions until fragrant (2-3 minutes).
- Add black beans and bell peppers, mixing well. Cook for about 5 minutes.
- Lay a tortilla flat, add the chicken and bean mixture, sprinkle with cheese and cilantro.
- Fold the sides over the filling, then roll from the bottom up to wrap.
- Toast burritos seam-side down in a lightly greased skillet for 2-3 minutes on each side until golden.
- Serve hot with favorite toppings like salsa or guacamole.
Notes
For a vegetarian option, substitute chicken with sautéed mushrooms or zucchini. Serve with refreshing sides like a salad or chips.
