Ingredients

  • 2 boneless chicken breasts or thighs
  • 1 can black beans, drained and rinsed
  • 1 cup bell peppers, chopped
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons Cajun seasoning
  • 4 large flour tortillas
  • 1/4 cup fresh cilantro, chopped
  • 1 cup shredded cheese (optional)
  • 1 tablespoon olive oil

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic and onions.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken, season with salt and Cajun seasoning, and sauté until golden brown (6-8 minutes). Remove and set aside.
  3. In the same skillet, add more oil if needed and sauté garlic and onions until fragrant (2-3 minutes).
  4. Add black beans and bell peppers, mixing well. Cook for about 5 minutes.
  5. Lay a tortilla flat, add the chicken and bean mixture, sprinkle with cheese and cilantro.
  6. Fold the sides over the filling, then roll from the bottom up to wrap.
  7. Toast burritos seam-side down in a lightly greased skillet for 2-3 minutes on each side until golden.
  8. Serve hot with favorite toppings like salsa or guacamole.

Notes

For a vegetarian option, substitute chicken with sautéed mushrooms or zucchini. Serve with refreshing sides like a salad or chips.
