Ingredients
Scale
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together butter and powdered sugar until light and fluffy.
- Stir in vanilla extract and chopped pecans.
- Gradually mix in flour and salt until just combined.
- Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
- Bake for 12-15 minutes or until edges are lightly golden.
- Let the cookies cool slightly, then roll them in powdered sugar.
- Allow to cool completely on a wire rack before serving.
Notes
Toasting pecans beforehand enhances their flavor. Chill dough for easier handling if too soft.
