Creamy burrata cheese fills hearty pasta shells, combined with sautéed mushrooms and fresh herbs for a comforting dish.
Ingredients
- Large pasta shells
- Fresh burrata cheese
- Baby bella mushrooms (or cremini/shiitake)
- Minced garlic
- Fresh basil
- Fresh parsley
- Olive oil
- Salt
- Pepper
- Parmesan cheese (for garnish)
Instructions
- Boil salted water and cook the pasta shells until al dente, then drain and set aside.
- In a skillet, heat olive oil over medium heat, add minced garlic, and sauté until fragrant.
- Add chopped mushrooms to the skillet, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Stir in fresh herbs.
- In a large bowl, mix sautéed mushrooms with the burrata cheese carefully.
- Fill each pasta shell with the burrata mixture and place them in a baking dish, open side up.
- Combine more olive oil, a splash of pasta water, and seasonings; drizzle this over the stuffed shells.
- Bake in a preheated oven at 350°F (175°C) for about 20-25 minutes.
- Garnish with grated Parmesan and serve hot.
Notes
Feel free to substitute ingredients as needed. Use goat cheese or ricotta if burrata is unavailable.
