Description

Creamy burrata cheese fills hearty pasta shells, combined with sautéed mushrooms and fresh herbs for a comforting dish.


Ingredients

  • Large pasta shells
  • Fresh burrata cheese
  • Baby bella mushrooms (or cremini/shiitake)
  • Minced garlic
  • Fresh basil
  • Fresh parsley
  • Olive oil
  • Salt
  • Pepper
  • Parmesan cheese (for garnish)

Instructions

  1. Boil salted water and cook the pasta shells until al dente, then drain and set aside.
  2. In a skillet, heat olive oil over medium heat, add minced garlic, and sauté until fragrant.
  3. Add chopped mushrooms to the skillet, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Stir in fresh herbs.
  4. In a large bowl, mix sautéed mushrooms with the burrata cheese carefully.
  5. Fill each pasta shell with the burrata mixture and place them in a baking dish, open side up.
  6. Combine more olive oil, a splash of pasta water, and seasonings; drizzle this over the stuffed shells.
  7. Bake in a preheated oven at 350°F (175°C) for about 20-25 minutes.
  8. Garnish with grated Parmesan and serve hot.

Notes

Feel free to substitute ingredients as needed. Use goat cheese or ricotta if burrata is unavailable.
