Description

Ingredients

  • Large pasta shells (conchiglie)
  • Fresh burrata cheese
  • Cremini and shiitake mushrooms
  • High-quality extra virgin olive oil
  • Fresh garlic
  • Sweet onion
  • Vegetable or chicken broth
  • Fresh basil
  • Fresh parsley
  • Salt
  • Freshly cracked black pepper

Instructions

  1. Prep the ingredients by cleaning and slicing the mushrooms, dicing the onion, and mincing the garlic.
  2. In a skillet, heat olive oil and sauté the onions until translucent, then add mushrooms and cook until browned.
  3. Add minced garlic and chopped herbs and cook for an additional minute.
  4. Pour in the broth and let it simmer to develop flavors.
  5. Boil salted water and cook pasta shells until al dente, then drain.
  6. Once the sauce is ready, fill each pasta shell with burrata and place them back in the skillet.
  7. Preheat oven to 375°F (190°C), sprinkle cheese on top and bake for 15-20 minutes.
  8. Serve with fresh herbs on top for added flavor.

Notes

Feel free to substitute burrata with ricotta mixed with cream for a lighter option. Ensure the pasta is cooked al dente to hold the filling.
