  • 2 cups shredded chicken (boneless and skinless)
  • 1/2 cup buffalo sauce
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 10 egg roll wrappers
  • Oil for frying

Instructions

  1. In a large bowl, combine shredded chicken, buffalo sauce, cream cheese, and shredded cheddar. Mix until well incorporated.
  2. Lay an egg roll wrapper diagonally. Place about a tablespoon of the filling at the bottom corner. Fold the sides over and roll tightly but gently to enclose the filling.
  3. Moisten the edges of the wrapper with water to seal them properly.
  4. In a large skillet, heat oil over medium heat.
  5. Add the egg rolls in batches, cooking until golden brown and crispy, about 2-3 minutes per side.
  6. Transfer the egg rolls to a paper towel-lined plate to drain excess oil.
  7. Serve warm with your favorite dipping sauces.

Notes

For a milder flavor, substitute buffalo sauce with barbecue sauce. You can also use shredded turkey or tofu for dietary preferences.
