Description
Delightful cookies that blend the nutty aroma of browned butter with rich chocolate, toasted pecans, and a hint of bourbon, perfect for any occasion.
Ingredients
Scale
- 1 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon cornstarch
- 2 teaspoons pure vanilla extract
- 1 cup dark chocolate chunks
- 1 cup chopped pecans
- 1/4 cup bourbon
Instructions
- Brown the Butter: Melt the butter in a saucepan over medium heat, swirling until it turns golden brown and nutty.
- Cool the Butter: Remove from heat and let cool slightly.
- Mix Wet Ingredients: In a bowl, combine brown butter, brown sugar, and granulated sugar. Add eggs one at a time and stir in vanilla.
- Incorporate Dry Ingredients: In another bowl, whisk flour, baking soda, salt, and cornstarch; add to wet mixture until just combined.
- Add Chocolate and Pecans: Fold in chocolate chunks, toasted pecans, and bourbon.
- Chill the Dough: Refrigerate dough for at least 30 minutes.
- Preheat the Oven: Preheat to 350°F (175°C) and line baking sheets with parchment.
- Scoop and Bake: Scoop dough onto sheets, bake for 10-12 minutes or until edges are set and centers are slightly underbaked.
- Cool and Enjoy: Allow cookies to cool on sheets for a few minutes before transferring to a wire rack.
Notes
Chill the dough longer for thicker cookies; it’s okay if they look slightly underbaked when they come out of the oven.
