- 4 fresh eggs
- 4 slices of bacon or sausage
- 2 slices of sharp cheddar cheese
- 1 ripe avocado, sliced
- 1 medium tomato, sliced
- Handful of fresh greens
- Fresh herbs (basil, chives, or cilantro)
- Salt and pepper to taste
- Hot sauce (optional)
Instructions
- Slice the bagel in half and toast until golden brown.
- In a skillet over medium heat, crack the eggs and whisk until blended. Cook gently until fluffy or sunny-side up.
- Cook bacon or sausage in a separate pan until crispy. If using leftovers, warm them in the skillet.
- Layer the toasted bagel with cooked eggs, your choice of protein, and cheese. Add avocado, tomatoes, and fresh greens as desired.
- Sprinkle with fresh herbs and a pinch of salt and pepper. Drizzle hot sauce if using.
- Close the sandwich, slice in half, and serve immediately.
