- 2 cups fresh cherries, pitted and chopped
- 1 cup brandied cherries, drained
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup dark chocolate, chopped into chunks
Instructions
- Prepare the cherries: If using fresh cherries, pit and chop them. In a small saucepan, combine the cherries with a tablespoon of sugar, and cook gently for about 5 minutes until softened. Remove from heat and let cool.
- Mix the base: In a large mixing bowl, whisk together the heavy cream, whole milk, remaining sugar, and vanilla extract until the sugar dissolves.
- Combine the flavors: Gently fold in the cooled cherries into the cream mixture, leaving some chunks for texture.
- Add chocolate: Stir in the chopped dark chocolate until evenly distributed.
- Chill: Cover the mixture and refrigerate for at least 2 hours or overnight.
- Churn: Pour the chilled mix into an ice cream maker and churn according to the manufacturer’s instructions, usually around 20-30 minutes.
- Freeze: Transfer the ice cream to an airtight container and freeze for at least 4 hours.
- Serve and enjoy: Once set, scoop out generous servings and enjoy!
Notes
For a dairy-free version, consider using almond milk or coconut cream. You can also use sweetened condensed milk instead of sugar for an even creamier texture.
