Ingredients

  • 4 lbs bone-in short ribs
  • 2 onions, chopped
  • 2 carrots, chopped
  • 4 cloves garlic, minced
  • 1 bottle full-bodied red wine
  • 2 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 teaspoon brown sugar (optional)
  • Oil, for searing

Instructions

  1. Season the short ribs generously with salt and pepper.
  2. In a large pot or Dutch oven, heat oil over medium-high heat and sear the short ribs in batches until browned on all sides.
  3. Remove the short ribs and set aside. In the same pot, add onions, carrots, and garlic. Sauté for 5-7 minutes until tender.
  4. Deglaze the pot with red wine, scraping up browned bits, and let it simmer for a few minutes.
  5. Stir in beef broth and herbs, then return the short ribs to the pot and submerge them in the liquid.
  6. Cover and braise in a preheated oven at 350°F for 2.5 to 3 hours.
  7. Check for tenderness in the final hour; they should be fork-tender.
  8. Let the ribs rest for a few minutes before serving.
