Ingredients

- 4 lbs bone-in short ribs
- 2 onions, chopped
- 2 carrots, chopped
- 4 cloves garlic, minced
- 1 bottle full-bodied red wine
- 2 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1 teaspoon brown sugar (optional)
- Oil, for searing
Instructions
- Season the short ribs generously with salt and pepper.
- In a large pot or Dutch oven, heat oil over medium-high heat and sear the short ribs in batches until browned on all sides.
- Remove the short ribs and set aside. In the same pot, add onions, carrots, and garlic. Sauté for 5-7 minutes until tender.
- Deglaze the pot with red wine, scraping up browned bits, and let it simmer for a few minutes.
- Stir in beef broth and herbs, then return the short ribs to the pot and submerge them in the liquid.
- Cover and braise in a preheated oven at 350°F for 2.5 to 3 hours.
- Check for tenderness in the final hour; they should be fork-tender.
- Let the ribs rest for a few minutes before serving.
