- 4 salmon filets (fresh, wild-caught recommended)
- 2 ripe peaches, sliced
- ½ cup bourbon
- ¼ cup brown sugar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Fresh herbs (thyme or basil) for garnish
- 1 tablespoon olive oil
Instructions
- In a bowl, whisk together ½ cup of bourbon, ¼ cup of brown sugar, and 1 tablespoon of Dijon mustard until the sugar is dissolved. Add salt and pepper, and mix well.
- Place the salmon filets in the marinade and soak for at least 30 minutes (2 hours for best results).
- Preheat the oven to 400°F (200°C).
- Slice the peaches in half, remove the pit, and cut into wedges. Toss the peaches in the remaining marinade for about 10 minutes.
- On a lined baking sheet, place the marinated salmon skin-side down. Arrange peach wedges around the salmon, pouring any remaining marinade over everything.
- Roast for 15-20 minutes or until the salmon flakes easily and the peaches are caramelized.
- Sprinkle fresh herbs over the top before serving and drizzle with leftover glaze.
