Ingredients

  • 2 tbsp tomato paste
  • 1 can (28 oz) canned tomatoes (whole or diced)
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, diced
  • 1/2 cup white wine (optional)
  • 1 cup chicken or beef broth
  • 2 tbsp olive oil
  • Fresh herbs (basil, thyme, bay leaf)
  • Salt and pepper, to taste
  • 12 oz pappardelle pasta

Instructions

  1. Prepare your ingredients: Finely chop onion, carrot, celery, garlic, and dice mushrooms.
  2. Sauté aromatics: In a large skillet, heat olive oil over medium heat, add onions, carrots, and celery; sauté for 5-7 minutes. Add garlic and mushrooms; cook until fragrant.
  3. Add ground meat: Increase heat to medium-high, add the ground meat; cook until browned.
  4. Incorporate tomato and herbs: Add tomato paste, canned tomatoes, broth, herbs, salt, and pepper. If using wine, pour it in.
  5. Let it simmer: Lower heat and cover; let it simmer for at least 1 hour, stirring occasionally.
  6. Cook pappardelle: About 10 minutes before sauce is done, cook the pappardelle according to package instructions until al dente; drain and reserve a cup of pasta water.
  7. Combine: Toss pappardelle with sauce, adding reserved pasta water for consistency.
  8. Serve and enjoy: Finish with fresh herbs, olive oil, and Parmesan cheese if desired.

Notes

Allowing the sauce to simmer longer enhances flavor. Consider making this the day before for even better results.
