- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp curry powder
- 1/2 cup sultanas or raisins
- 1 tbsp lemon zest and juice
- 2 eggs
- 1 cup breadcrumbs
- Fresh herbs (like parsley or cilantro), chopped
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, sauté the chopped onions in a splash of olive oil until translucent—about 5 minutes; then add minced garlic and curry powder and stir for another minute.
- In a mixing bowl, combine ground meat, sautéed onion mixture, sultanas, lemon juice, lemon zest, eggs, and breadcrumbs. Season with salt and pepper; mix until just combined.
- Shape the mixture into balls the size of golf balls and place them on a lined baking sheet.
- Bake the meatballs in the preheated oven for about 25 minutes or until cooked through and golden brown.
- Serve warm with brown rice, cucumber salad, or in warm pitas.
