A delightful and comforting Blueberry Banana Bread that blends ripe bananas and juicy blueberries for a delicious treat perfect for breakfast or snacks.
Ingredients
Scale
- 2–3 ripe bananas
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 cup fresh or frozen blueberries
- 1 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mash the bananas in a mixing bowl until smooth, leaving a few lumps for texture.
- Stir in the melted butter.
- Add the granulated sugar, beaten egg, and vanilla extract, and mix until well combined.
- In a separate bowl, combine the baking soda, salt, and flour. Gradually mix this into the wet ingredients until just combined.
- Fold in the blueberries gently to avoid bursting them.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Use ripe bananas for the best flavor and moisture. You can substitute whole wheat flour for added nutrition or Greek yogurt for butter as a lower-fat option.
