  • 2 blood oranges (zested and juiced)
  • 1 cup extra-virgin olive oil
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. Zest two blood oranges into a mixing bowl, then squeeze the juice from another to obtain about 1 cup.
  3. In a separate bowl, whisk together the olive oil, eggs, and blood orange juice until smooth.
  4. In another bowl, whisk together the flour, sugar, baking powder, cardamom, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  9. If desired, drizzle with a light icing made from powdered sugar and blood orange juice before serving.

Notes

For a vegan option, replace each egg with ¼ cup of unsweetened applesauce or a flaxseed meal mixture. Make sure to let the cake cool completely before slicing for the best texture.
