- 2 blood oranges (zested and juiced)
- 1 cup extra-virgin olive oil
- 3 large eggs
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cardamom
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- Zest two blood oranges into a mixing bowl, then squeeze the juice from another to obtain about 1 cup.
- In a separate bowl, whisk together the olive oil, eggs, and blood orange juice until smooth.
- In another bowl, whisk together the flour, sugar, baking powder, cardamom, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- If desired, drizzle with a light icing made from powdered sugar and blood orange juice before serving.
Notes
For a vegan option, replace each egg with ¼ cup of unsweetened applesauce or a flaxseed meal mixture. Make sure to let the cake cool completely before slicing for the best texture.
