  1. Activate your starter: Feed your sourdough starter at least 4 hours before you start baking.
  2. Mix your dough: In a large bowl, combine flour, sourdough starter, salt, and warm water. Stir until shaggy dough forms.
  3. Knead the dough: Knead on a lightly floured surface for about 10 minutes until smooth and elastic.
  4. First rise: Transfer to a greased bowl, cover it, and let it rise for 1-2 hours or until doubled in size.
  5. Prepare for baking: Preheat oven to 425°F (220°C) and roll dough into circles about 1/4 inch thick.
  6. Season generously: Place flatbreads on a baking sheet, brush with olive oil, sprinkle with black pepper, and distribute Parmesan on top.
