- 1/4 cup grated Parmesan cheese

Instructions
- Activate your starter: Feed your sourdough starter at least 4 hours before you start baking.
- Mix your dough: In a large bowl, combine flour, sourdough starter, salt, and warm water. Stir until shaggy dough forms.
- Knead the dough: Knead on a lightly floured surface for about 10 minutes until smooth and elastic.
- First rise: Transfer to a greased bowl, cover it, and let it rise for 1-2 hours or until doubled in size.
- Prepare for baking: Preheat oven to 425°F (220°C) and roll dough into circles about 1/4 inch thick.
- Season generously: Place flatbreads on a baking sheet, brush with olive oil, sprinkle with black pepper, and distribute Parmesan on top.
- Bake: Bake for 12-15 minutes or until golden brown and crisp.
- Cool & serve: Let cool slightly before slicing and serve warm.
Notes
Ensure your oven is preheated properly to achieve a nice crust. Using a pizza stone can enhance the texture.
