Ingredients

  • 8 oz fresh cremini or button mushrooms, chopped
  • 1/2 cup cherries or cranberries, fresh or dried
  • 3 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 cup breadcrumbs
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Create a pocket in the turkey breast, ensuring not to cut all the way through.
  2. In a skillet, heat butter and olive oil. Sauté garlic until fragrant, then add mushrooms and cook until golden brown. Mix in breadcrumbs, cherries/cranberries, herbs, salt, and pepper.
  3. Spread stuffing across the turkey breast, roll it up tightly, and secure with twine or toothpicks.
  4. Place in a roasting pan, brush with olive oil, season, and roast for about 1 hour until internal temperature reaches 165°F (75°C). Rest for 10-15 minutes before slicing.
