- 1 boneless turkey breast
- 8 oz fresh cremini or button mushrooms, chopped
- 1/2 cup cherries or cranberries, fresh or dried
- 3 cloves garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 1 cup breadcrumbs
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Create a pocket in the turkey breast, ensuring not to cut all the way through.
- In a skillet, heat butter and olive oil. Sauté garlic until fragrant, then add mushrooms and cook until golden brown. Mix in breadcrumbs, cherries/cranberries, herbs, salt, and pepper.
- Spread stuffing across the turkey breast, roll it up tightly, and secure with twine or toothpicks.
- Place in a roasting pan, brush with olive oil, season, and roast for about 1 hour until internal temperature reaches 165°F (75°C). Rest for 10-15 minutes before slicing.
