Ingredients

  • 1 boneless turkey breast
  • 1 cup fresh cremini or shiitake mushrooms, chopped
  • 4 slices of bacon, diced
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1 teaspoon fresh thyme or rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: 1/4 cup Gruyere or goat cheese

Instructions

  1. Sauté chopped mushrooms and diced bacon in a skillet over medium heat until mushrooms are tender and bacon is crispy. Add minced garlic and cook until fragrant. Stir in breadcrumbs and herbs, then let cool.
  2. Lay out turkey breast on a clean surface, pound to an even layer, and season with salt and pepper.
  3. Spoon the mushroom mixture evenly over the turkey, roll it up tightly and secure with kitchen twine.
  4. Preheat oven to 375°F (190°C). Brown the roulade in a skillet with olive oil on all sides.
  5. Transfer to a baking dish and roast for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let rest for 10 minutes, then slice and serve.

Notes

Avoid overstuffing the roulade to prevent bursting during cooking. Always let the turkey rest before slicing to retain juices.
