Description

A delightful rolled chocolate cake filled with whipped cream and cherries, perfect for any occasion.


Ingredients

  • 1 cup All-Purpose Flour (or gluten-free flour)
  • 1/4 cup Unsweetened Cocoa Powder (or Dutch-processed cocoa)
  • 4 large Eggs
  • 1 cup Granulated Sugar (or coconut sugar)
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 cup Heavy Cream (or coconut cream)
  • 1 cup Fresh Cherries (or frozen/canned)
  • 1/2 cup Powdered Sugar
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 15×10-inch jelly roll pan with parchment paper.
  2. In a mixing bowl, beat the eggs and granulated sugar together until pale and fluffy, about 5 minutes.
  3. In another bowl, sift together flour, cocoa powder, baking powder, and salt, then fold it into the egg mixture.
  4. Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
  5. While the cake bakes, prepare a clean kitchen towel dusted with powdered sugar.
  6. Invert the baked cake onto the towel, peel off the parchment paper, and roll the cake from one end to the other. Let it cool completely.
  7. Whip heavy cream with powdered sugar and vanilla until stiff peaks form, and prepare your cherries.
  8. Once the cake is cool, carefully unroll it, spread whipped cream, and scatter the cherries.
  9. Re-roll the cake gently and chill for at least an hour before serving.
  10. Dust with powdered sugar and slice before serving.

Notes

Allow the cake to cool completely in its rolled shape to avoid tearing when unrolling.
