- 1 cup All-Purpose Flour (or gluten-free flour)
- 1/4 cup Unsweetened Cocoa Powder (or Dutch-processed cocoa)
- 4 large Eggs
- 1 cup Granulated Sugar (or coconut sugar)
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 1 cup Heavy Cream (or coconut cream)
- 1 cup Fresh Cherries (or frozen/canned)
- 1/2 cup Powdered Sugar
- 1 tsp Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C) and line a 15×10-inch jelly roll pan with parchment paper.
- In a mixing bowl, beat the eggs and granulated sugar together until pale and fluffy, about 5 minutes.
- In another bowl, sift together flour, cocoa powder, baking powder, and salt, then fold it into the egg mixture.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
- While the cake bakes, prepare a clean kitchen towel dusted with powdered sugar.
- Invert the baked cake onto the towel, peel off the parchment paper, and roll the cake from one end to the other. Let it cool completely.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form, and prepare your cherries.
- Once the cake is cool, carefully unroll it, spread whipped cream, and scatter the cherries.
- Re-roll the cake gently and chill for at least an hour before serving.
- Dust with powdered sugar and slice before serving.
Notes
Allow the cake to cool completely in its rolled shape to avoid tearing when unrolling.
