- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup vegetable oil
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare mini muffin tins by greasing with baking spray or lining with mini cupcake liners.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs, then add milk and vegetable oil. Stir in melted chocolate chips if desired.
- Make a well in the dry ingredients and pour the wet mixture in. Fold gently until just combined.
- Fill each muffin cup about two-thirds full and sprinkle additional chocolate chips on top if desired.
- Bake for 12–15 minutes, or until a toothpick inserted comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack. Serve warm or at room temperature.
Notes
These muffins can be frozen for up to three months. Consider using whole wheat flour or reducing sugar for a healthier option.
