Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare mini muffin tins by greasing with baking spray or lining with mini cupcake liners.
  3. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  4. In another bowl, beat the eggs, then add milk and vegetable oil. Stir in melted chocolate chips if desired.
  5. Make a well in the dry ingredients and pour the wet mixture in. Fold gently until just combined.
  6. Fill each muffin cup about two-thirds full and sprinkle additional chocolate chips on top if desired.
  7. Bake for 12–15 minutes, or until a toothpick inserted comes out clean.
  8. Cool in the tin for a few minutes before transferring to a wire rack. Serve warm or at room temperature.

Notes

These muffins can be frozen for up to three months. Consider using whole wheat flour or reducing sugar for a healthier option.
