Ingredients

- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup cocoa powder
- 1/2 cup semi-sweet chocolate chips
- 1 cup milk
- 1/3 cup vegetable oil or melted butter
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare your mini muffin pan.
- In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, cocoa powder, and chocolate chips.
- In another bowl, mix your wet ingredients: milk, vegetable oil (or melted butter), eggs, and vanilla extract until combined.
- Pour the wet mixture into the dry ingredients and gently stir until just combined.
- Fill each muffin cup about three-quarters full.
- Bake for 10-12 minutes, or until a toothpick inserted comes out clean.
- Allow them to cool in the pan for a few minutes before transferring to a wire rack.
Notes
For a vegan option, substitute eggs with applesauce and use non-dairy milk.
