Description

Ingredients

  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup cocoa powder
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup milk
  • 1/3 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your mini muffin pan.
  2. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, cocoa powder, and chocolate chips.
  3. In another bowl, mix your wet ingredients: milk, vegetable oil (or melted butter), eggs, and vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  5. Fill each muffin cup about three-quarters full.
  6. Bake for 10-12 minutes, or until a toothpick inserted comes out clean.
  7. Allow them to cool in the pan for a few minutes before transferring to a wire rack.

Notes

For a vegan option, substitute eggs with applesauce and use non-dairy milk.
