  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes (with juices)
  • 1 cup corn (frozen or canned)
  • 1 diced onion
  • 23 minced garlic cloves
  • 23 tablespoons taco seasoning
  • 4 cups chicken or vegetable broth
  • Chopped cilantro (for garnish)
  • Optional toppings: sour cream, shredded cheese, sliced avocado, tortilla chips

Instructions

  1. In a large pot over medium heat, add a bit of olive oil. Toss in the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic fragrant, about 5 minutes.
  2. Add the ground meat to the pot, breaking it up with a wooden spoon. Cook until browned all over.
  3. Stir in the canned tomatoes, drained beans, and corn, followed by the taco seasoning. Mix well.
  4. Pour in the broth, ensuring all ingredients are submerged.
  5. Bring the soup to a gentle simmer. Reduce the heat and let it simmer for about 20-30 minutes to meld the flavors.
  6. Just before serving, sprinkle fresh cilantro and adjust seasoning to taste.
  7. Ladle the soup into bowls and serve hot with desired toppings.
