- 1 pound ground meat (beef, turkey, or chicken)
- 1 can black beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes (with juices)
- 1 cup corn (frozen or canned)
- 1 diced onion
- 2–3 minced garlic cloves
- 2–3 tablespoons taco seasoning
- 4 cups chicken or vegetable broth
- Chopped cilantro (for garnish)
- Optional toppings: sour cream, shredded cheese, sliced avocado, tortilla chips
Instructions
- In a large pot over medium heat, add a bit of olive oil. Toss in the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic fragrant, about 5 minutes.
- Add the ground meat to the pot, breaking it up with a wooden spoon. Cook until browned all over.
- Stir in the canned tomatoes, drained beans, and corn, followed by the taco seasoning. Mix well.
- Pour in the broth, ensuring all ingredients are submerged.
- Bring the soup to a gentle simmer. Reduce the heat and let it simmer for about 20-30 minutes to meld the flavors.
- Just before serving, sprinkle fresh cilantro and adjust seasoning to taste.
- Ladle the soup into bowls and serve hot with desired toppings.
