- 1 can black, kidney, or pinto beans, drained
- 1 can diced tomatoes
- 1 cup corn (fresh, frozen, or canned)
- 2 tbsp taco seasoning
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- Olive oil for sautéing
- Toppings: tortilla chips, avocado, cheese, sour cream, cilantro
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until softened (4-5 minutes).
- Add ground meat, cook until browned, breaking it up with a spatula.
- Sprinkle in taco seasoning, stirring to coat the meat evenly for 1 minute.
- Add canned diced tomatoes (with juices), drained beans, corn, and broth. Bring to a gentle boil, then simmer to meld flavors (20-30 minutes).
- Taste and adjust seasoning as needed.
- Serve in bowls topped with your choice of tortilla chips, avocado, cheese, sour cream, or cilantro.
Notes
This soup can be adjusted for vegetarian options by using beans instead of meat and skipping broth if preferred.
