  • 2 tbsp taco seasoning
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • Olive oil for sautéing
  • Toppings: tortilla chips, avocado, cheese, sour cream, cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until softened (4-5 minutes).
  2. Add ground meat, cook until browned, breaking it up with a spatula.
  3. Sprinkle in taco seasoning, stirring to coat the meat evenly for 1 minute.
  4. Add canned diced tomatoes (with juices), drained beans, corn, and broth. Bring to a gentle boil, then simmer to meld flavors (20-30 minutes).
