Ingredients

  • 46 pounds pork shoulder (or pork butt)
  • 1/2 cup brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • 1/4 cup water

Instructions

  1. Trim excess fat from the pork shoulder and pat dry with paper towels.
  2. In a bowl, combine brown sugar, paprika, garlic powder, onion powder, cayenne pepper, chili powder, salt, and pepper.
  3. Coat the pork shoulder with the spice mixture evenly.
  4. Place the pork in the slow cooker, add apple cider vinegar and water at the bottom.
  5. Cover and cook on low for 8-10 hours, until the pork is tender.
  6. Shred the pork with two forks and mix with juices.
  7. Serve warm on toasted buns with coleslaw.

Notes
