- 1 Beef Tenderloin
- 8 oz Cremini or shiitake mushrooms, finely chopped
- 2 cloves Fresh Garlic, minced
- 1 Sweet Onion, finely chopped
- 2 tbsp Fresh Rosemary, chopped
- 2 tbsp Fresh Thyme, chopped
- 4 oz Cream Cheese
- 1 cup Spinach or Kale, chopped
- 2 tbsp Olive Oil or Butter
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Add onion and mushrooms, sauté until soft.
- Add minced garlic and cook for another minute. Stir in herbs, spinach, salt, and pepper.
- LET the mixture cool and then mix in cream cheese until combined.
- Trim any excess fat from the tenderloin. Butterfly it horizontally without cutting all the way through.
- Spread the cooled stuffing evenly over the meat. Roll tightly and tie with kitchen twine.
- Sear the tenderloin in an oven-safe skillet over medium-high heat until browned.
- Transfer the skillet to the oven. Roast for 25-30 minutes or until the internal temperature reaches 135°F (57°C).
- Rest the beef for 10-15 minutes under aluminum foil before slicing.
- Serve immediately with sides of your choice.
Notes
For substitutions, use pork tenderloin or chicken breast. For a vegetarian option, use a mixture of nuts and legumes.
