Ingredients

  • 1 Beef Tenderloin
  • 8 oz Cremini or shiitake mushrooms, finely chopped
  • 2 cloves Fresh Garlic, minced
  • 1 Sweet Onion, finely chopped
  • 2 tbsp Fresh Rosemary, chopped
  • 2 tbsp Fresh Thyme, chopped
  • 4 oz Cream Cheese
  • 1 cup Spinach or Kale, chopped
  • 2 tbsp Olive Oil or Butter
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add onion and mushrooms, sauté until soft.
  3. Add minced garlic and cook for another minute. Stir in herbs, spinach, salt, and pepper.
  4. LET the mixture cool and then mix in cream cheese until combined.
  5. Trim any excess fat from the tenderloin. Butterfly it horizontally without cutting all the way through.
  6. Spread the cooled stuffing evenly over the meat. Roll tightly and tie with kitchen twine.
  7. Sear the tenderloin in an oven-safe skillet over medium-high heat until browned.
  8. Transfer the skillet to the oven. Roast for 25-30 minutes or until the internal temperature reaches 135°F (57°C).
  9. Rest the beef for 10-15 minutes under aluminum foil before slicing.
  10. Serve immediately with sides of your choice.

Notes

For substitutions, use pork tenderloin or chicken breast. For a vegetarian option, use a mixture of nuts and legumes.
