Description

Ingredients

  • 1 Beef Tenderloin
  • 2 tablespoons Olive oil
  • Fresh herbs (rosemary, thyme, parsley)
  • 4 cloves Garlic (minced)
  • Salt and pepper to taste
  • Broth or red wine for deglazing

Instructions

  1. Bring the beef to room temperature by removing it from the fridge about 30 minutes before cooking.
  2. Pat the beef dry and rub it with olive oil, salt, pepper, minced garlic, and chopped herbs.
  3. Heat a skillet over high heat and sear the tenderloin for 4-5 minutes on each side.
  4. Preheat the oven to 425°F (220°C) and transfer the skillet to the oven. Cook for 20-25 minutes for medium-rare.
  5. Let the beef rest for 10-15 minutes before slicing.
  6. Slice into medallions and serve with side dishes like garlic sautéed mushrooms.
