- 8 oz Mushrooms (Button or Cremini), sliced

- 1 Onion, sliced
- 3 cloves Garlic, minced
- 2 tsp Fresh Thyme
- 2 tbsp Fresh Parsley, chopped
- 2 Bay Leaves
- 3 tbsp Flour
- 1 tbsp Oil (for searing)
- Salt and Pepper to taste
Instructions
- Prep the ingredients by cutting beef into chunks and seasoning with salt and pepper.
- In a heavy skillet or Dutch oven, heat oil and sear beef until browned on all sides.
- Remove beef and sauté onions and carrots until softened, then add garlic and mushrooms.
- Deglaze with red wine, scraping up any browned bits from the pan.
- Add seared beef back with broth, flour, thyme, parsley, and bay leaves.
- Simmer covered for 2-3 hours, stirring occasionally.
- Adjust seasoning before serving, garnishing with parsley.
Notes
For a vegetarian version, substitute the beef with hearty vegetables. The right red wine enhances the flavor—choose one that you enjoy drinking.
