Ingredients

  • 23 bell peppers (mixed colors)
  • 8 oz pasta (penne or rotini)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 sweet onion, diced
  • 1 cup chicken or beef broth
  • Fresh herbs (basil or parsley)
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Sauté diced onion and chopped bell peppers until tender, about 4-5 minutes. Add minced garlic for the last minute.
  3. Push vegetables to one side and add ground beef; cook until browned, seasoning with salt and pepper.
  4. Combine and add broth, mixing well. Simmer gently for about 5 minutes.
  5. In a separate pot, boil pasta according to package instructions. Drain and stir into the skillet.
  6. Sprinkle fresh herbs and mix everything together.
  7. Serve warm, optionally adding Parmesan cheese on top.
