Ingredients

- 1 lb ground beef
- 2–3 bell peppers (mixed colors)
- 8 oz pasta (penne or rotini)
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 sweet onion, diced
- 1 cup chicken or beef broth
- Fresh herbs (basil or parsley)
- Salt and pepper to taste
- Pinch of red pepper flakes (optional)
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Sauté diced onion and chopped bell peppers until tender, about 4-5 minutes. Add minced garlic for the last minute.
- Push vegetables to one side and add ground beef; cook until browned, seasoning with salt and pepper.
- Combine and add broth, mixing well. Simmer gently for about 5 minutes.
- In a separate pot, boil pasta according to package instructions. Drain and stir into the skillet.
- Sprinkle fresh herbs and mix everything together.
- Serve warm, optionally adding Parmesan cheese on top.
Notes
