Ingredients

  • 1 lb ground beef (80/20)
  • 2 bell peppers (red, yellow, and green)
  • 8 oz pasta (your choice of shape)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • Fresh basil and parsley, chopped
  • Olive oil
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Prepare the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook until al dente, according to package instructions. Drain and set aside, reserving about a cup of pasta water.
  2. Cook the Beef: In a large skillet over medium-high heat, add a drizzle of olive oil. Once hot, add the ground beef. Cook until browned and no longer pink, about 6-8 minutes. Season with salt and pepper.
  3. Sauté the Veggies: Push the beef to the side of the skillet and add bell peppers and garlic. Sauté until they soften, about 3-4 minutes.
  4. Combine and Enrich: Stir in the diced tomatoes and let it simmer for about 5 minutes. If mixture seems dry, add a splash of reserved pasta water.
  5. Add Pasta and Toss: Add the cooked pasta to the skillet. Toss to coat everything evenly, adding more pasta water as needed until you reach your desired consistency.
  6. Finish with Fresh Herbs: Remove from heat, and mix in freshly chopped herbs. Serve hot, with an optional sprinkle of grated Parmesan.

Notes

For extra flavor, caramelize the garlic before adding the peppers. Customize with cheese or hot sauce as desired.
