  • 8 oz fettuccine or penne pasta
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Boil salted water and cook pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat, add ground beef or steak, and cook until browned.
  3. Drain excess fat, then add chopped onion and bell peppers, sautéing until soft, about 5–7 minutes.
  4. Stir in minced garlic and cook for an additional minute.
  5. Pour in beef broth, scraping the skillet for browned bits, and let it simmer to reduce slightly.
  6. Add cooked pasta, tossing everything together.
  7. Finish with oregano, red pepper flakes, and grated Parmesan before letting it rest for a few minutes before serving.

Notes

For added flavor, allow the vegetables to caramelize and taste as you go for seasoning adjustments. Experiment with additional vegetables like mushrooms or zucchini.
