- 1 lb ground beef or thinly sliced steak
- 8 oz fettuccine or penne pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/2 cup grated Parmesan cheese
Instructions
- Boil salted water and cook pasta according to package instructions until al dente.
- In a large skillet, heat olive oil over medium heat, add ground beef or steak, and cook until browned.
- Drain excess fat, then add chopped onion and bell peppers, sautéing until soft, about 5–7 minutes.
- Stir in minced garlic and cook for an additional minute.
- Pour in beef broth, scraping the skillet for browned bits, and let it simmer to reduce slightly.
- Add cooked pasta, tossing everything together.
- Finish with oregano, red pepper flakes, and grated Parmesan before letting it rest for a few minutes before serving.
Notes
For added flavor, allow the vegetables to caramelize and taste as you go for seasoning adjustments. Experiment with additional vegetables like mushrooms or zucchini.
